Sympli Menu YAM RATATOUILLE
Ingredients
250g Sympli yam cubes400g canned tomatoes50ml oil1 large zucchini, cut into chunks1 large eggplant, cut into chunks2 red bell peppers, deseeded and sliced2 large red onions, cut into large chunks4 small fresh tomatoes, quartered4 garlic cloves, chopped6 fresh basil leaves2 tbsps. Thyme2 tbsps. herbs de Provence2 tbsps. balsamic vinegarSalt and seasoning to taste
Preparation
How to Prepare Yam Ratatouille.
Add yam into a pot, add just enough water to cover the yams and add a pinch of salt. Cook yams till 80% cooked and set aside.
Add oil in a skillet, add zucchini, eggplant, bell peppers, herbs de Province and salt. Stir-fry for 3 minutes, remove vegetables from skillet and set aside.
In the same skillet, add onions, garlic, thyme and stir-fry for 3 minutes or until onions are translucent.
Now add already stir-fried vegetables to the onions, add fresh and canned tomatoes, balsamic vinegar, basil leaves, salt and seasoning to taste and cook for 10 minutes.
Now add pre-boiled yams, mix it all up and cook on low to medium heat for another 10 minutes. Serve hot.
